Lentil Couscous with Maple Vinaigrette

Ingredients

For the couscous

  • 1 medium zucchini, sliced into half-moons
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 3 tbsp (45 mL) olive oil, divided
  • Salt and pepper, to taste
  • 1 cup (250 mL) water
  • 1 cup (250 mL) couscous
  • 200 g L’Ancêtre Organic Halloumi, cut into small cubes
  • 1 can (540 mL) lentils, rinsed and drained
  • 1/4 cup (60 mL) toasted sliced almonds
  • 2 tbsp (30 mL) chopped fresh parsley

For the maple vinaigrette 

  • 1/2 cup (125 mL) olive oil
  • 4 tsp (20 mL) apple cider vinegar
  • 1 tbsp (15 mL) maple syrup
  • 2 tsp (10 mL) Dijon mustard
  • Salt and pepper, to taste

Colourful, nourishing and packed with fibre and protein, this couscous features roasted vegetables, lentils and a homemade maple vinaigrette. L’Ancêtre Organic Halloumi, named Best Grilling Cheese at Sélection Caseus, becomes golden and crispy on the outside while staying soft and tender inside, making this salad both satisfying and full of flavour.

Preparation

  1. Preheat the oven to 425°F (220°C).
  2. Arrange the zucchini, bell pepper and carrot on a parchment-lined baking sheet. Drizzle with 1 tablespoon of olive oil, season with salt and pepper, and roast for 20 to 25 minutes until tender and lightly browned.
  3. Meanwhile, bring the water to a boil. Place the couscous in a bowl with 1 tablespoon of olive oil. Pour the boiling water over it, season with salt and pepper, cover and let stand for 5 minutes. Fluff with a fork.
  4. Whisk together all the vinaigrette ingredients.
  5. Heat the remaining olive oil in a non-stick skillet over medium heat. Cook the halloumi cubes for 1 to 2 minutes, stirring frequently, until golden.
  6. In a large serving bowl, combine the couscous, roasted vegetables, lentils, almonds, parsley and the maple vinaigrette. Top with the grilled halloumi and serve.

This salad is just as delicious warm as it is cold, making it a perfect choice for meal prep, lunches or light dinners.
