Grilled Halloumi Smash Croissant with Pistachio Pesto and Crunchy Apple Slaw

Ingredients

For the croissants

  • 2 butter croissants
  • 1 package (150 g) L’Ancêtre Organic Halloumi
  • 1 tbsp olive oil

For the pistachio pesto

  • 1 cup fresh basil leaves
  • ½ cup roasted unsalted pistachios
  • ¼ cup grated Parmesan
  • 1 small garlic clove
  • ⅓ cup olive oil
  • Juice of ½ lemon
  • Salt and pepper, to taste

For the slaw 

  • 2 cups finely shredded green cabbage
  • 1 cup finely shredded red cabbage
  • 1 cup finely chopped kale
  • 1 green apple, cut into thin matchsticks
  • 2 tbsp sunflower or pumpkin seeds (optional) 

For the maple dressing

  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper

Crispy croissants, perfectly grilled organic halloumi, homemade pistachio pesto and a fresh, crunchy slaw come together in this delicious summer sandwich.

Preparation

  1. Combine all the pesto ingredients in a food processor and blend until smooth with a slightly coarse texture. Set aside.
  2. Whisk together all the dressing ingredients. Toss with the cabbage, kale, apple and seeds. Set aside.
  3. Slice the croissants in half horizontally. Place each half cut-side down in a hot skillet and press firmly with a spatula or grill press to flatten them. Cook for a few minutes until deeply golden and crisp.
  4. Slice the L’Ancêtre Organic Halloumi into pieces about 1 cm thick. Heat the olive oil in a skillet and grill the slices for 2 to 3 minutes per side until golden brown.
  5. Spread a generous layer of pistachio pesto over the bottom half of each croissant. Top with the grilled halloumi, then add a generous handful of the crunchy slaw. Finish with the top half of the croissant and serve immediately.
