Warm Cheddar, Spinach and Artichoke Dip

Ingredients

  • 200 g L’Ancêtre Organic Extra Old Cheddar, grated
  • 1 can (398 mL) artichoke hearts, drained and chopped
  • 120 g frozen chopped spinach, thawed and well drained
  • 2 cups (500 mL) milk
  • 1/4 cup (60 mL) all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 pinch cayenne pepper

Creamy, cheesy and topped with a golden crust, this warm dip is guaranteed to become the star of your next gathering. Made with L’Ancêtre Organic Extra Old Cheddar, winner of Best Cheddar at Sélection Caseus, it delivers bold, aged cheddar flavour that pairs perfectly with spinach and artichokes. Serve it hot with crusty bread, crackers or fresh vegetables for an irresistible appetizer.

Preparation

  1. Preheat the oven broiler.
  2. In a medium saucepan, whisk together the milk, flour, garlic powder, onion powder, cayenne pepper and salt.
  3. Cook over medium-high heat, whisking constantly, until the mixture thickens, about 5 to 7 minutes.
  4. Stir in one-third of the grated cheddar, then add the chopped artichokes and spinach. Cook for another 1 to 2 minutes, until the cheese has melted.
  5. Transfer the mixture to an 8-inch (20 cm) oven-safe baking dish. Sprinkle the remaining cheddar evenly over the top.
  6. Broil for about 5 minutes, or until the cheese is golden brown and bubbling.
  7. Serve immediately with toasted baguette slices, crackers or fresh vegetables.

Leftovers can be refrigerated in an airtight container for up to 3 days. Reheat in a 350°F (180°C) oven or use as a delicious topping for pasta, baked potatoes or grilled sandwiches.
