Peach and Greek Feta Salad

Ingredients

  • 250g cherry tomatoes
  • 3 large peaches
  • 1 shallot
  • 2 tablespoons honey
  • Juice of one lemon
  • Salt and pepper to taste
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 150g feta cheese
  • Chopped fresh mint

Preparation

  1. Cut the cherry tomatoes in half and place them in a large salad bowl.
  2. Finely chop the shallot and add it to the cherry tomatoes.
  3. In a small bowl, mix the honey, lemon juice, salt, pepper, olive oil, and apple cider vinegar to prepare the vinaigrette.
  4. Peel the peaches, remove the pits, and cut them into thick slices. Add the peach slices to the salad bowl.
  5. Pour the vinaigrette over the cherry tomatoes and peaches, then gently toss to coat the ingredients.
  6. Crumble the feta cheese over the salad.
  7. Sprinkle with chopped fresh mint on top.
  8. Gently toss the salad one last time and serve immediately.
