  • 1 tbsp olive oil
  • 1 liter vegetable or beef broth
  • 1 cup dry white wine (optional)
  • 2 slices baguette or rustic bread
  • 1 cup smoked cheddar, grated
  • 1 tbsp sugar (to caramelize the onions)
  • 1 tbsp flour (optional, for thickening)
  • Salt and pepper to taste

There’s nothing more comforting than a bowl of gratinéed onion soup, with its slowly caramelized onions, rich and flavorful broth, and a layer of crusty bread topped with melted cheddar. This timeless classic, perfect for chilly days, is made with simple and affordable ingredients, yet its intense, comforting flavor is sure to impress. Preparation

  1. Caramelize the onions:
    • In a large pot, melt the butter with the olive oil over medium heat.
    • Add the sliced onions and a pinch of salt. Cook gently for 30-40 minutes, stirring occasionally. Add the sugar after 10 minutes to help caramelize the onions and get a nice golden color. The onions should become soft and deeply browned.
  2. Deglaze and prepare the soup:
    • If using, add the flour (to thicken the soup) and cook for 1-2 minutes to eliminate the raw flour taste.
    • Deglaze with the white wine (if used), scraping the bottom of the pot to release any fond.
    • Add the broth and let it simmer for 10-15 minutes. Season with salt and pepper to taste.
  3. Prepare the gratin:
    • Preheat your oven to 200°C (400°F).
    • Place the slices of bread on a baking sheet and toast them slightly in the oven.
    • Once the onions are cooked and the broth is well combined, ladle the soup into oven-safe bowls. Place a slice of toasted bread on top of each bowl of soup.
  4. Gratinate:
    • Generously sprinkle grated smoked cheddar over the toasted bread.
    • Place the bowls in the oven for 10-15 minutes, until the cheese is melted and golden brown.
