  • 4 wraps
  • 1 ripe avocado
  • Salt and pepper to taste
  • Choice of spices (e.g., paprika, cumin, or herbs de Provence)
  • Sriracha or hot sauce to taste

Preparation

  1. Mash the ripe avocado in a bowl and season with salt and pepper. Set aside.
  2. Cut the Greek PDO Feta into cubes.
  3. Heat a skillet over medium heat. Add the feta cubes to the skillet and let them heat gently for about 2-3 minutes on each side until they begin to soften and lightly brown.
  4. Crack an egg into the skillet with the heated feta. Cook the egg according to your preference (for example, for a sunny-side-up egg, cook for about 2-3 minutes until the white is set but the yolk remains runny). Repeat for the remaining eggs.
  5. Spread a layer of mashed avocado onto each wrap.
  6. Place the cooked egg and feta onto each wrap.
  7. Sprinkle with your choice of spices and add a drizzle of sriracha or hot sauce according to your taste.
  8. Roll up each wrap and slice in half if desired.
  9. Serve immediately.
