Apple and Gouda Phyllo Bites

Ingredients

  • 6 sheets phyllo pastry
  • 60 g L’Ancêtre Organic Butter, melted
  • 2 apples, peeled and diced
  • 1 tbsp L’Ancêtre Organic Butter
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 200 g L’Ancêtre Organic Gouda, cut into 12 cubes
  • Fresh thyme leaves, for garnish (optional)

Flaky, melty and perfectly balanced between sweet and savoury, these bite-sized appetizers pair warm cinnamon apples with creamy L’Ancêtre Organic Gouda. Baked in crisp phyllo pastry, they’re an elegant addition to holiday gatherings, cocktail parties or cheese boards.

Preparation

  1. Preheat the oven to 350°F (180°C). Lightly grease a 12-cup muffin tin.
  2. Melt 1 tablespoon of butter in a skillet. Add the apples, brown sugar and cinnamon. Cook for 5 to 7 minutes, stirring occasionally, until the apples are tender and lightly caramelized. Let cool slightly.
  3. Brush each phyllo sheet with melted butter and stack them two at a time. Cut into squares large enough to line the muffin cups.
  4. Press the phyllo squares into the muffin tin to create small pastry cups.
  5. Spoon the apple mixture into each cup and top with one cube of Gouda.
  6. Bake for 12 to 15 minutes, until the phyllo is golden and crisp and the cheese is melted.
  7. Garnish with fresh thyme, if desired, and serve warm.

For an extra touch of sweetness, drizzle with a little honey or maple syrup just before serving.
