  • 2 teaspoons cornstarch
  • 1 tablespoon water

For assembly:

  • 1 sheet of puff pastry
  • 1 egg
  • 1 tablespoon milk

For the glaze:

  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon

Preparation

Instructions:

  1. Prepare the filling:
    • In a skillet, melt the butter over medium heat.
    • Add the diced apples, brown sugar, cinnamon, a pinch of salt, vanilla extract, and lemon juice.
    • Cook over low heat for 6 to 8 minutes, until the apples are tender.
    • Mix the water and cornstarch, then add this mixture to the skillet. Continue cooking until the filling thickens. Remove from heat and let it cool slightly.
  2. Prepare the assembly:
    • Preheat the oven to 400°F (200°C).
    • Roll out the puff pastry and cut it into 4 squares.
    • In a small bowl, whisk the egg with the milk.
    • Brush the edges of the pastry squares with the egg mixture.
  3. Assemble the turnovers:
    • Place a portion of the apple filling on one side of each pastry square.
    • Fold the pastry over the filling to cover it and seal the edges with a fork.
    • Brush the tops of the turnovers with the remaining egg mixture.
  4. Prepare the glaze:
    • In a small bowl, mix the sugar and cinnamon.
    • Sprinkle this mixture over the tops of the turnovers.
  5. Bake:
    • Place the turnovers on a baking sheet lined with parchment paper.
    • Bake for 20 to 25 minutes, until the turnovers are golden and crispy.
