You can prepare these brochettes in advance simply by covering them with damp paper towels and refrigerating them. Feel free to serve them with honey or blackcurrant mustard.
Swiss Emmental, Apple and Ham Brochettes

|227 g (1/2 lb)||smoked ham, sliced 1.25 cm (1/2 in.)|
|200 g||L’Ancêtre Swiss Emmental cheese|
|3||large green or red apples|
- Cut ham slices into 36 cubes, and set aside. Do the same with the cheese. Halve the apples, then trim a little off the ends. Slice each halved apple in six, and set aside.
- Thread all three ingredients onto mini skewers (cut in two if necessary), then arrange upright on a serving platter.
- To provide the brochettes with a stable base, make sure skewer tips do not stick out of the final piece of ham or cheese at the bottom. Serve immediately.
