Beer cheese fondue nachos recipe

Ingredients

For the nachos

  • 1 package of organic beer cheese fondue
  • 1 bag of corn chips
  • 1 cup of black beans
  • 1/2 cup of green olives
  • 1/2 onion, thinly sliced
  • 1/4 cup of banana peppers

For the salsa

  • 2 tomatoes, diced
  • 1/2 onion, finely chopped
  • 1/4 cup of chopped cilantro
  • 2 tablespoons of red wine vinegar
  • 1 tablespoon of olive oil
  • 1 finely chopped jalapeño pepper
  • Salt and pepper to taste

Nachos

Preparation

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix all the ingredients for the salsa. Set aside.
  3. Line the bottom of an oven-safe dish (or a baking sheet) with half of the corn chips.
  4. On the corn chips, layer half of the black beans, green olives, onion slices, and banana peppers.
  5. Using a utensil to drain the liquid, evenly distribute about half of the salsa over the nachos (to taste).
  6. In a microwave-safe bowl, melt the beer cheese fondue. Start with one minute, then stir. Add 30 seconds, then stir. Repeat until smooth and homogeneous.
  7. Pour half of the beer cheese fondue over the nachos.
  8. Cover the cheese with the remaining corn chips.
  9. On the corn chips, layer the remaining black beans, green olives, onion slices, and banana peppers.
  10. Using a utensil to drain the liquid, distribute the remaining salsa (to taste).
  11. Pour the remaining beer cheese fondue over the nachos.
  12. Bake for 7-10 minutes at 350°F, then add 3-5 minutes on broil.
