Preparation

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Unroll your puff pastry or shortcrust pastry on a lightly floured surface. Using a cookie cutter or a glass, cut out circles of pastry slightly larger than the tartlet molds you’ll be using.
  3. Place the pastry circles in the tartlet molds, pressing gently to adhere them well. Prick the bottom of each tartlet with a fork.
  4. Arrange the cherry tomato halves on the bottom of the tartlets.
  5. Generously sprinkle each tartlet with grated cheddar cheese. Season with salt and pepper to taste. If desired, you can add fresh herbs like basil or oregano for extra flavor.
  6. Place the tartlets on the prepared baking sheet and place them in the preheated oven.
  7. Bake the tartlets for about 15 to 20 minutes, or until the crust is golden and crisp and the cheese is melted and slightly golden on top.
  8. Once baked, remove the tartlets from the oven and let them cool slightly before removing them from the molds.
  9. Serve the cherry tomato and cheddar tartlets warm or at room temperature, optionally garnished with additional fresh herb leaves to decorate.
