Last year marked the first time an organic cheese won this prestigious award. L\u2019Anc\u00eatre Cheddar is a lactose-free, firm-textured cheese made from unpasteurized milk.<\/p>\n<p>Two other cheeses from Fromagerie L\u2019Anc\u00eatre have also been named finalists in this event. Among them is the L\u2019Anc\u00eatre organic unpasteurized Smoked Cheddar, aged with traditional applewood smoking, in the &#8220;Flavored by Smoking, Maceration, or Addition of Flavoring Substances&#8221; category. Additionally, in the &#8220;Reduced Fat Cheese (less than 20%)&#8221; category, the L\u2019Anc\u00eatre organic medium-light unpasteurized Cheddar, partially skimmed (18% milk fat): low in fat yet retaining full flavor.<\/p>\n<p>According to Pascal D\u00e9silets, CEO of the company, &#8220;This recognition confirms the expertise and efforts of our teams at L\u2019Anc\u00eatre. The competition aims to introduce consumers to the creativity of cheesemakers, expressed through a variety of innovative, high-quality products.<\/li>\n<li>S\u00e9lection Caseus is the only competition dedicated to recognizing and promoting cheeses produced in Quebec. It is open to all cheesemakers, regardless of their company size, cheese type, or milk used.<\/li>\n<li>The competition is organized by the Ministry of Agriculture, Fisheries, and Food and the Quebec Institute of Food Technology.<\/li>\n<li>S\u00e9lection Caseus receives financial support from Fromages d\u2019ici as its primary financial partner, followed by major grocery chains IGA, Metro, and Provigo.
